Really excited today about emailing out some information about bread-making courses here in Crich which we are hoping to start in the summer. It has been a long time coming, but we are finally making progress on plans to expand the bakery into the building next door and it is this expansion which will help us to offer bread-making courses in the not to distant future.
What sort of courses?
I have been thinking about what people might be interested in learning about and am considering offering two differently themed courses: one on bread making in general and one on sourdough baking.
The general course would cover the sponge and dough method, yeasted doughs, sweetened/enriched doughs, bread-making techniques and the principles of longer fermentation with an introduction to sourdough.
The sourdough course would cover different sourdough starters, working with wetter doughs, principles of long fermentation and rye sourdoughs.
